Last night I was able to enjoy some Sweetcorn Fritters without being at the Game of Thrones food truck in NYC. They are quite simple and quick to make and I hope you’ll join in and make a batch along with me. It’s a very versatile dish and can be served in a variety of ways. You can have it as an appetizer, side dish, midday snack, or even a nice breakfast. Keep on reading after the break for the recipe I used along with some photos of the process and final product.

Ingredients:

  • 1 Large Egg
  • 1/2 cup of milk
  • 1 cup of sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • a few pinches of fresh ground black pepper
  • 1 cup of oil (I used corn oil)
  • sweetcorn either a 12 ounce can or about 3 ears

this will make about 10-12 decent sized fritters

Some tools you may need:

  • measuring cup
  • measuring spoons
  • whisk
  • spatula
  • 12″+ frying pan/skillet
  • mixing bowl
  • paper towels
  • brown paper bag/newspaper

Now that you have everything you need to get going theirs one more thing I want to say before we jump in. Hot oil burns so be careful! I’m sure you already knew that but I wanted to make sure. I know you think it may be fun to hit the handle of the pan and get scolding oil on your face, but just looking like Sandor won’t be enough to pick up the ladies. And to the best of my knowledge he didn’t get his scarred face from a tragic fritter accident. That being said on to the cooking.

First you’ll want to start out by cracking your egg into the mixing bowl and lightly whisking it:

Then add in your 1/2 cup of milk:

Now you’ll want to put in your sugar, salt, baking powder and flour (don’t put the flour all in at the same time mix it in 1/4 cup at a time):

If you are using canned corn drain out the extra fluid and then add to the bowl:

Now mix it up nice and good, you want it to have a feel that is a bit more doughy than pancake mix. If it feels to watery add some more flour to the mix and if it feels to solid give it a touch more milk:

Before you start frying your fritters you need to set up a draining area. Lay down a couple of paper bags or some new paper on the counter. Oil loves soaking into things and only a few paper towels will end up leaving you with a mess. Lay about 3 layers of paper towels on top of the bays/newspaper and now you’ll have a place to put your finished fritters:

Now you need to heat up your oil in your pan. Use enough oil to cover the bottom of the pan with a thick enough base so you can soak your fritters. Use medium heat, you don’t want the oil to smoke just to get hot. To test out whether the temp is right take a little piece of the mix and put it in the pan to see if it starts bubbling around it and cooking:

Once it’s ready start scooping your mix onto the pan. I used an ice-cream scoop but any old spoon will do (spray with a little cooking oil if you don’t want it to stick):

Make as many dollops as you can on the pan leaving enough room too flip them. Now let them cook for about 2-3 minutes, you want to get them to a nice deep golden brown:

Flip them over and let them sit for another 2-3 minutes (some soldiers must die for the others to live, and a tasty soldier at that):

Once the fritters are cooked to your liking transfer them over to the draining area to sit:

Keep repeating this process until you’ve run out of your mix. If you run out of room on your draining station lay down some more paper towels on the previous layer and keep stacking:

Let them cool off and them pile them on a serving dish so you can start enjoying them:

You can dress them up any way you want as well. A little honey dribbled over them or served with cheese or fruit will bring in some different tastes to the dish. And some tea to drink is a nice way to wash it all down.
